It's BASEBALL tailgate time! This season's featured recipes have a summery feel to them, but would be great year round. Enjoy!

Sherri's Salsa

I call this "Sherri's Salsa" because my mom, Sherri, has been making it for tailgates as long as I can remember. Today's photo is from the blog "And Emma Makes 5" where the writer also loves a similar version of  this go-to recipe.

Mix together:

1 can of blank beans

1 can of white shoe peg corn

a healthy handful of crumbled feta (about half a container)

a healthy handful of chopped green onions

1 or 2 diced jalepenos

a cup of canola oil

a cup of sugar

Mix everything together, drain excess liquid, and serve with tortilla chips. I like to mix it together and let it "stew" overnight in the juices before draining. For a large crowd, I double the recipe.

Caribbean Sliders

This photo is from fosterfarms.com where they have a similar recipe. Check it out for a very fancy marinade to prep the chicken.



You will need:

marinade ingredients

chicken

sliced pineapple (grill the slices if you want!)

Hawaiian rolls

teriyaki sauce

sliced onion

sliced avocado

First marinate your chicken. You can go simple with a mixture of lemon/lime juice and salt/pepper or you can get fancy and throw in some honey, soy sauce, or apple cider vinegar to your marinade. Cooking is fun! Be creative!

Once the chicken has taken a 3-4 hour bath, grill it. Then stack your sliders and use teriyaki sauce in place of mayo.

Baseball Cupcakes

This photo is all over Pinterest, so unfortunately we do not know the original source. We love the idea, though! It isn't easy to draw with icing, so make the baseball stitching with M&M's!

You will need:

white boxed cake mix

milk

eggs

vegetable oil (or melted butter)

cream cheese frosting (I never use any other kind)

red M&M's

You can make boxed cake mix taste like it came from a bakery by using milk in place of water, using melted butter in place of vegetable oil, and by adding one more egg to the recipe. A lot of boxed mixes now call for 3 eggs, so if it does, do not add the extra egg. Only do this if it calls for 2 eggs. These tricks make a much more rich cake and no one will ever know it was from a box!

Frost and decorate!
